what's so special about 1.07 that makes people want to play that version? Is there a link that goes into that?
 
This one and, more general on time-traveling but also a very nice overview of why to play older patches, including 1.07, this one.

First things that come to mind are eth items (more damage), charms (again, more damage) and some uniques, like Arkaine's (huge vita boost, next to other very good mods), LoH (massive fire absorb), Raven Claw (lvl 30 exploding arrow when brought forward to 1.10+), ... There's much more though.

you forgot all the Zod runes in 1.07
 
I play 1.07 for the OP runewords.

Personally I'm intrigued by the possibilities of the crafted items; good ones can be amazing but it's huge amount of work to gather the ingredients to do any meaningful amount of crafting. It's a good long-term challenge. Those can produce some truly unique items fitting some special builds.

This. Truly the most forseen feature of time traveling is the fact that 1.07 crafts can get all affixes. Even though bugs prevent things like Jewelers (4 os) from happening, some crafts can beat out today's high end runewords.

Basically imagine yourself in the current patch, but that rare Colossus Blade you just found could roll 3 sockets, 500 Ed, 40% IAS, 30% LL, and indestructible opposed to measly 200 Ed and charges of firebolt your used to.

Don't worry, @Grape will keep us posted when he starts the next IFT. ;)
